Red Cabbage Sauté

Finished Red Cabbage Saute I was inspired to try a dish using red cabbage as the primary ingredient. Red cabbage is a low glycemic index food that is high in vitamin A and C. It also offers a good supply of iron and dietary fiber. This was very tasty!

 

1/2 head of red cabbage

1/2 white onion

2 cloves of garlic

4 small sweet peppers (mix)

3 handfuls of kale

1/4 cup of chicken broth

1/2 tbsp of oyster sauce

1/2 tbsp of olive oil

discretionary amount of seasonings (salt/pepper/garlic powder/paprika)

10 pre-cooked and cleaned shrimp

 

Slice and chop cabbage and set aside in a bowl. Slice and chop onion and peppers and set aside in a bowl. Chop garlic and add to a medium heated non-stick pan. Add olive oil and cabbage. Season lightly. Sauté for a few minutes then add chicken broth. Cover and cook until slightly tender for 5-7 minutes. Add kale and reduce heat to medium-low. Add onions and peppers. Season again and add oyster sauce.  Cook until peppers are tender then remove from heat.

Remove tails from shrimp and add to non-stick skillet. Gently cook for about 3 minutes and serve with the sautéed veggies.

Turkey Salsa Chili

Hey everyone! Hope your day is going by smoothly. I made a quick meal this afternoon and just wanted to share the recipe because it’s so darn good. Again y’all know my stance on recipes; create it however the way you want….BE CREATIVE!

 

Turkey Salsa Chili Recipe:

1 Can of red kidney beansTurkey Salsa Chili 2

1 whole chopped sweet onion

1/4 of each- roasted red, orange, & yellow peppers

1 handful of spinach

1/4 cup of water

1/4 cup of organic salsa

1/2 pound of ground turkey

Seasonings:

Old Bay

Roasted garlic

Salt

Toppings:

Plain Greek yogurt

 

Instructions:

Lightly salt and brown ground turkey on the stove. Season to taste with Old Bay and roasted garlic. In another pot, empty can of beans into it and heat to medium. Add chopped onions and allow mixture to cook for 2 minutes. Add chopped roasted peppers, a few dashes of Old Bay, salsa and water. Allow mixture to boil for 2 minutes. Finally add in the turkey and spinach. Reduce heat to low and cover. After simmering for 15 minutes, remove pot from heat. Place in bowl or on top of rice with a dollop of Greek yogurt. Enjoy!

Vegan Chickpea Brownies

I just wanted to share a quick recipe to satisfy those sweet cravings. This is an easy recipe for Vegan Chickpea Brownies. When you try it, you can mix in whatever you prefer. Sometimes, I make the cookie or cookie cake versions and they are slightly more chewy because I use less extra ingredients. I actually took these pictures last year but finally made time to finish the video.

SN: This stuff is time consuming. Literally took 3 hours to get it the way I wanted it. Glad it worked out lol
